Haitian Cuisine
Haitian cuisine consists of cooking traditions and practices from Ayiti. It is a Creole cuisine, that originates from a blend of several culinary styles that populated the western portion of the island of Hispaniola - namely the West African, French, indigenous Taíno, Spanish and Arab influences. The Taino Natives, France, Spain, and the continent of Africa have all played significant roles in shaping the cuisine. The use of specific dynamic spices distinguishes it from other Caribbean islands.
Many dishes come from a seasoning base, with a foundation of green onions, thyme, parsley, peppers, and garlic. Starchy foods are among the most common staples. Diri ak pwa (rice and beans) is a main component of the national dish. Djondjon , (or black rice and beans) is a key native staple. Locally grown Haitian mushrooms are used to dye and flavor the rice, and the mushrooms as well as lima beans top the rice. Calalou , another key dish, is composed of crab meat, salted pork, spinach, onion, okra, and peppers. Pork is popular, though usually fried for flavor (called Griyo ). Conch meat is popular around the coasts. And for dessert, pain patate is popular. This pudding is made with sweet potato, fig, and banana pudding.

Joseph Gérard Therilien
Born in Petit Goâve, Joseph Gérard Therilien has ascended the ranks in the world of culinary arts and hospitality, leaving an indelible mark on Haiti's hotel and restaurant scene. His dedication to the industry, coupled with his insatiable thirst for knowledge, has cemented his reputation as one of the leading experts in hotel and restaurant management in Ayiti.
Gérard's journey into the realm of hospitality began with a solid educational foundation. He attended Lycee Faustin Soulouque de Petit-Goave and later, College Sait Martial. Venturing further into specialized education, Gérard delved deep into restaurant management, studying at both the renowned Cornell University and Ecole Hoteliere d'Haiti. His commitment to perfecting his craft took him to the International Correspondence Schools, where he studied Hotel and Restaurant Management, and later to the Institute of Tourism and Hotel Management in Salzburg, Austria, for a specialized teacher training in food and beverage management.
With a robust educational foundation, Gérard embarked on a flourishing career that has seen him assume several significant roles. He championed the Haitian culinary scene as the General Manager at ACHAC Academie Haitienne des Arts Culinaires, where he shaped the future of aspiring chefs and hospitality professionals. His leadership prowess was also evident during his tenure as the Manager at Restaurant Le Récif, and at Académie Haïtienne des Arts Culinaires.
In earlier stages of his career, Gérard showcased his meticulous attention to detail and superior management skills as the Maître d'hôtel at prominent establishments like Habitation Leclerc, Ayiti, and Royal Haitian Hotel Club. Additionally, he managed the acclaimed 'Le Traiteur de Santo', further expanding his influence in the Haitian culinary world.
Away from the hustle and bustle of professional kitchens and hotel lobbies, Gérard calls Port-au-Prince, Ayiti, his home. He shares his life with Adeline Therilien, his cherished wife. Together, they savor the beauty of Haitian culture and traditions.
